To evolve Greavard into Houndstone, the Ghost Dog Pokémon will undergo evolution from Level 30 when it is levelled up at night.
Where To Catch Houndstone
If you aren’t necessarily bothered about evolving Greavard and simply want to add Houndstone’s tome to your Pokédex or hunt for a Shiny Pokémon, you may alternatively be looking to catch the pocket monster instead. The Ghost Dog Pokémon does spawn in the wild and the Pokédex lists that they live in “many parts of Paldea.” That’s vague, but the screenshot below should point you in the right direction:
